Black Bean Soup Recipe

Yummy Black Bean Soup

(Makes approximately 18 servings)
Ingredients:
8 cups chicken broth (vegetable broth for Meatless Monday!)
2 cups dry black beans, washed (and soaked if you prefer)
4 carrots, peeled and chopped or shredded
4 stalks celery, sliced
1 red onion, chopped
3 tablespoons onion powder
2 tablespoons cumin
1 tablespoon parsley
2 tablespoons garlic powder
1 vegetable bouillon cube
Salt and pepper to taste
Fresh cilantro to taste

Directions:

  1. In a 5 quart crock pot, combine all ingredients.
  2. Cook on high setting for approximately 6 hours, or until the beans are soft and cooked through (or, cook on medium for 8-9 hours). It’s important to know your crock pot. Each crock pot cooks differently. Adjust cooking times and temperatures accordingly.
  3. Using a hand blender, blend the soup right in the crock pot until you achieve the texture and smoothness you prefer. If you don’t have a hand blender, transfer a few cups at a time into a blender or food processor and blend till smooth.
  4. Garnish with fresh cilantro.

Apple-Cinamon Protein Oatmeal Pancakes

Here is a good recipe for when you have to eat on the run.

Apple-Cinnamon Protein Oatmeal Pancakes

Mix the following Ingredients in a bowl until it makes a pancake batter;
3/4cup Oatmeal
1 whole egg
3-4 egg whtes
1scoop EpxBody Praline Protein Powder
1/2 chopped apple
dash of cinnamon
2 packets splenda/stevia/agave(optional)

Pour the mixture into a fry pan and cook on medium until one side is lightly browned. Flip over util the other side is done. eat hot or wrap it in a foil and take on the run.

Zucchini Lasagna Recipe

Serves: 4

Ingredients

Process


  1. Brown the ground beef in a large pot over medium heat, stirring frequently.
  2. Add in garlic, onion and green pepper, and continue to sauté for 5 minutes.
  3. Stir in tomato paste and tomato sauce.
  4. Add in parsley, basil, oregano, salt and pepper, continue to stir.
  5. Bring sauce to a light boil, then remove from heat.
  6. Grease a 9" x 13" baking dish with coconut oil.
  7. Place a thin layer (1/2 inch) of the sauce in the baking dish.
  8. Layer zucchini and mushrooms over sauce, and repeat, alternating layering of sauce, then zucchini and mushrooms.
  9. Bake lasagne at 325°F for 15 minutes, covered with foil.
  10. After 15 minutes, remove foil, increase temperature to 350°F, and bake for an additional 15 minutes.

"Pear Cobbler" Oatmeal
Ingredients
1 cup of cooked oats
1/2 a pear, chopped cup1 tbsp. of raisins1/4-1/2 cup of milk or water1 tbsp of maple syrup
A few walnuts
A pinch of cinnamon
A pinch of nutmeg

Directions
Put one cup of cooked oats into a microwave safe dish (not plastic) along with pears, raisins, and milk or water.
Pop into the microwave for about a minute. After a minute, remove and give it all a stir before popping it back in for another 30 seconds or so or until it's heated through.
Stir in maple syrup and top with walnuts, cinnamon, nutmeg, and a splash of milk... enjoy!!
Serves 1.
